Charleston Grill Michelle’s Lowcountry Shrimp and Grits
Ingredients
Grits
2 cups coarse ground white grits
7 cups water
½ cup freshly grated Parmigiano Reggiano cheese
¼ cup unsalted butter
Shrimp Sauce
1 pound medium raw shrimp, peeled and deveined
4 thick slices hickory smoked bacon, diced
6 tablespoons unsalted butter
1 medium sweet onion, diced
½ poblano pepper, diced
3 garlic cloves, minced
½ teaspoon kosher salt
¼ teaspoon white pepper
¼ teaspoon cayenne pepper
1 tablespoon all purpose flour
½ cup chicken broth
¼ cup Madeira wine
2 tablespoons fresh lemon juice
1 tablespoon chopped fresh parsley
1 green onion, chopped
Preparation
Grits
Bring the water to a boil in a 4 quart saucepan.
Slowly whisk in the grits.
Reduce the heat to medium and whisk constantly for 5 minutes.
Cover, reduce the heat to low, and cook for about 1 hour, stirring occasionally, until tender.
Stir in the Parmesan and butter until smooth. Keep warm.
Shrimp Sauce
Cook the bacon in a large skillet over medium high heat until crisp.
Remove the bacon with a slotted spoon and reserve 2 tablespoons of the drippings.
Melt the butter in the reserved drippings.
Add the onion, poblano, and garlic. Cook for about 2 minutes until softened.
Add the shrimp and season with the salt, white pepper, and cayenne.
Sprinkle the flour over the shrimp and stir to coat.
Add the chicken broth, Madeira, and lemon juice.
Simmer until the shrimp are cooked through and the sauce thickens slightly.
Stir in the bacon and parsley.
Assemble
Spoon the warm grits into serving bowls.
Top with the shrimp sauce.
Garnish with chopped green onion.
Notes
Serves 6.
Avoid overcooking the shrimp. They only need a few minutes to become pink and opaque.
