Johnny D’s Waffles and Benedicts Blueberry Compote & Fresh Whipped Cream

Ingredients

Blueberry Compote

  • 3 tablespoons unsalted butter
  • ⅓ cup brown sugar
  • 2 pints fresh blueberries
  • ¼ teaspoon cinnamon
  • ¼ teaspoon cardamom, optional
  • 1 teaspoon vanilla extract
  • Pinch of kosher salt

Fresh Whipped Cream

  • 1 cup cold heavy cream or heavy whipping cream
  • 1 tablespoon granulated sugar
  • ½ teaspoon vanilla extract

Preparation

Blueberry Compote

  1. Melt the butter in a nonstick saucepan over medium high heat.
  2. Stir in the brown sugar, cinnamon, salt, and cardamom, if using. Bring the mixture to a gentle simmer.
  3. Add the blueberries and simmer for 5 to 7 minutes, stirring occasionally, until the berries begin to break down and release their juices.
  4. Once the compote has thickened enough to coat the back of a spoon, remove from the heat and stir in the vanilla extract.

Whipped cream

  1. Using a hand mixer or whisk, beat the heavy cream, sugar, and vanilla extract on medium high speed until medium peaks form, about 3 to 4 minutes with a mixer. Use immediately.

To Serve

  1. Prepare your favorite pancakes according to the recipe directions. Top the warm pancakes with blueberry compote and fresh whipped cream. Finish with powdered sugar, if desired.
