Ingredients
- 4 ripe tomatoes sliced
- t cup salt
- 1 cup grated hoop cheese
- 1 cup Dukes mayo
- 2T fresh chopped herbs
- 1 diced onion
- Salt and pepper to taste
- 8 mini pie crusts or one large
Directions
Slice tomatoes and cover with salt. Let sit for 1 hr. Rinse well and pat dry with paper towel. Mix remaining ingredients. Assemble pie shells and put tomato slices in the pie shells. Then top with cheese mixture. Bake at 350 for 25 minutes.
