Smokey Sweet Potato Dip - Fresh On The Menu Recipe
  • 1 medium Certified SC Grown sweet potato
  • 1 canned chipotle pepper in adobo sauce
  • 2 tbsp. lime juice
  • 1 tbsp. salsa
  • ¼ cup shredded pepper jack cheese

  1. Preheat oven to 350°
  2. Bake sweet potato for 45 minutes or until tender. Let cool slightly and peel.
  3. Place baked sweet potato in a food processor or blender; add remaining ingredients. Pulse until well combined. Serve warm or at room temperature with fresh veggies, crackers, or tortilla chips.
