Shrimp and Grits - Fresh On The Menu Recipe
Ingredients

Yeild: 4

  • 24 Large Shrimp
  • 1 qt Favorite Cooked Grits
  • 6 oz Favorite BBQ Sauce
  • 2 Cup Spinach
  • 12 Fried Green Tomatoes (bread your own or use a good prebreaded brand)
  • 1 oz Olive Oil
  • Salt and Pepper to taste

Directions

In a large pan on high heat, add half of olive oil and seasoned shrimp.  Saute until they are no longer translucent, about 4-5 minutes.  In a separate pan, sauté the spinach using the other half of the olive oil until wilted.  Add 1 tsp of butter and season to taste.  Warm the BBQ sauce and spoon onto the bottom of the plate.  Place grits directly on the sauce.  Layer the spinach over the grits, followed by the fried green tomatoes and finally the shrimp.
