- 4 tablespoons Roasted Red Peppers, diced
- 1/2 lb Sharp Cheddar Cheese, shredded
- 1/4 lb Extra-Sharp Cheddar Cheese, shredded
- 6 tablespoons Mayonnaise
- 4 tablespoons Extra Virgin Olive Oil
- 1 teaspoon Ground Sea Salt
- Pinch of Cayenne Pepper
Blend all ingredients together. Use immediately or cover and refrigerate. Yields 4 cups of Pimento Cheese.
