Kale Guacamole - Fresh On The Menu Recipe
  • 1 teaspoon garlic, minced
  • 1 small shallot, chopped
  • 2 cups Certified SC Grown Kale
  • 3 tablespoons cilantro, chopped
  • 3 tablespoons parsley, chopped
  • 1 small jalapeno, chopped and seeded
  • 1 large avocado, roughly chopped
  • ¼ cup lemon juice
  • ¼ cup chopped tomato
  • ½ teaspoon salt
  • 1/8 teaspoon pepper

  1. In a food processor, add garlic, shallot, and kale; pulverize until smooth.
  2. Add cilantro, parsley, and jalapeno; continue processing until smooth.
  3. Pour processed mixture into a bowl; add chopped avocado; mash until entire mixture is creamy and combined well.
  4. Stir in lemon juice, chopped tomato, salt, and pepper.
  5. Serve with favorite chips for dipping.
