Fried Green Tomatoes with Charred Corn Salsa and Local Blue Crab

Ingredients

Serves  4-6

  • 2 Local green tomatoes
  • 3 cups of seasoned flour
  • 3 cups of panko bread crumbs
  • 3 cups of buttermilk
  • 2 sprigs of cilantro
  • Fresh picked blue crab
  • SC corn (off the cobb)
  • Red bell pepper (small dice)
  • Red onion (small dice)
  • 1 jalapeno small dice (seed and gutted)
  • 1 tablespoon of lime juice
  • 1 tablespoon of butter
  • Salt and pepper

Directions

Cut your tomatoes to your desire. Dredge your tomatoes in flour, buttermilk then panko. Then into your fryer at 350 degrees for Three minutes. Remove and reserve. In a hot sauté pan add butter, crab, jalapeno, red onion, bell pepper, corn, salt and pepper. Sauté until tender. Layer tomato then salsa and repeat. Finish with fresh lime juice and cilantro. Serve immediately.
