- 1 to 2 medium size beets fully cooked and marinated
- ¼ of a rutabaga fully cooked and marinated
- ¼ lemon
- 1 part vinegar
- 3 parts olive oil
- Salt and pepper to taste
Marinate for beets and rutabagas:
- 4 tablespoons of olive oil
- 1 to 2 teaspoons of vinegar
- 1 tsp of red pepper flakes
- Juice of 1 lemon
- Salt and pepper
