Ingredients
1 tablespoon vegetable oil
1/2 cup chicken livers — chopped
1/2 ounce pork or beef — chopped
2 ounces onion — small dice
1 teaspoon garlic — minced
pinch salt
pinch pepper
pinch cayenne pepper
pinch paprika
4 fluid ounces chicken stock
1 pint Carolina Gold Rice Cooked
4 tablespoons green onion — sliced
4 tablespoons parsley — chopped
Directions
Heat the oil in a heavy-bottomed saucepan until smoking. Add the livers and the pork or beef and sauté until well browned. Add the onions, garlic and spices and continue to cook and brown the mixture. Deglaze with a little chicken stock and continue to cook until all the ingredients are well browned. Add the remaining chicken stock, the cooked rice, green onions and parsley. Stir and cook until the rice is hot and then serve.
