Buffalo Oysters

Ingredients

Serves 4-6 people

Oysters

  • 1 pint shucked oysters
  • 1 cup stone ground cornmeal
  • ½ cup all purpose flour
  • Salt and cayenne pepper to taste
  • 3-4 ribs celery, peeled and thinly sliced
  • 2-3 ounces good quality blue cheese
  • 4-6 ounces buffalo sauce (recipe follows)
  • Oil for deep frying

Buffalo Sauce

  • 2 ounces melted butter
  • ½ teaspoon Dijon mustard
  • ½ cup hot sauce
  • 1 ½ T Canola Oil

Directions

Oysters

  1. Preheat oil to 375 degrees
  2. Mix corn meal, flour salt and cayenne
  3. Working in batches if necessary, dredge oysters in corn meal mixture
  4. Carefully drop into oil and fry until deep golden – about a minute depending on the size of the oysters
  5. Remove and drain
  6. Place a spoonful of sauce on each plate
  7. Pile a few oysters on each plate of sauce
  8. Sprinkle with cheese
  9. Drizzle a little more sauce over the top
  10. Garnish with a big pinch of shaved celery

Buffalo Sauce

  1. Combine mustard and hot sauce
  2. Slowly whisk in butter
  3. Whisk in oil
  4. Keep at room temperature until ready to use
