Ingredients
Serves 6
- 3 lbs. of South Carolina Shrimp Peeled and Deveined
- 36 oz. of blue crab stuffing (Blue crab, scallops, shrimp, old bay, mayo, bell peppers)
- Salt and pepper to taste
- Your favorite vegetable blend…. (Southern succotash)
- Jasmine rice
- Stewed black beans
- Fresh lemon
Directions
Peel and devein your shrimp, add one once of stuffing to each shrimp and line them up on a baking sheet. Preheat your oven to 400 degrees. In the mean time you can start rice and beans. Place shrimp in oven and let cook for 8 to 10 minutes. They should be nice and golden brown. Give your vegetable blend a quick sauté with butter and salt just until tender. Squeeze your fresh lemon over shrimp. Plate stuffed shrimp with rice, bean and vegetable mixture.
