Baby Arugula Salad

Ingredients

3oz.     Baby Arugula
1oz.     Bliss 9 Vinegar
1oz.     Extra Virgin Olive Oil
Pinch   Black Lava Salt
1oz.     Toasted Pistachios
1          Thinly sliced piece of St. Agur Sheep’s Milk Cheese
3          Thin slices of Green Apple halves


Directions

Cut the long, thin, slice of St. Agur cheese into a rectangle about 2.5 inches by 6 or 7 inches long. Wrap the cheese into a loop and press the ends together just enough so that they hold its shape. In a mixing bowl place the arugula, olive oil and vinegar together and toss them till coated evenly. Season with the black salt. Gently place the greens into the cheese cylinder in the center of a plate. Stack the apple slices on top of each other and cut them in half and fan each stack on opposite sides of the salad so that you have 3 half slices on either side. Drizzle with a little olive oil and the toasted Pistachios. Enjoy!
