Ingredients
Cake:
- 2 C. All-Purpose Flour
- 2 C. Sugar
- 1 C. Butter or Margarine
- 1 C. Coca-Cola
- 2 T. Unsweetened Cocoa Powder
- 1/2 C. Buttermilk
- 2 Eggs
- 2 tsp. Vanilla
- 1 tsp. Soda
- 1/4 tsp. Salt
- 1 1/2 C. Mini Marshmellows
Icing:
- 1/2 C. Butter or Margarine
- 6 T. Coca-cola
- 2 T. Unsweetned Cocoa Powder
- 1 lb. Powdered Sugar
- 1 tsp. Vanilla
- 1 C. Chopped Pecans
Directions
Cake:
- Preheat oven 350 degrees. Butter and flour 9"x 13" baking pan. Sift flour and sugar into a large bowL Melt 1 cup butter or margarine in a heavy small saucepan. Add Coca-Cola and cocoa powder and bring just to boil. Stir into flour mixture. Blend in buttermilk, eggs, vanilla, baking soda and salt. Fold in marshmallows. Pour into prepared pan. Bake until tester inserted in center comes out clean, about 35 minutes.
Icing:
- Melt butter or margarine in heavy medium saucepan. Add Coca-Cola and cocoa powder and bring just to boil. Remove from heat. Stir in powdered sugar and vanilla. Fold in pecans. Spread icing over hot cake. Serve warm or cold.
