Rawls Kale Soup

Rawls Kale Soup - Fresh On The Menu Recipe
Ingredients
  • ¼ cup chopped raw bacon
  • 1 leek sliced rinsed and clean
  • 1 diced carrot
  • 1 stem of celery diced
  • 1 minced clove of garlic
  • 1 tsp olive oil
  • 1 bunch fresh kale stemmed and chopped
  • 4 cups of chicken broth
  • Salt and pepper to taste

Directions

In a medium soup pot place chopped bacon. Cook on medium high heat while stirring. Brown bacon but do not burn. Next add carrots, celery and cook until tender. Place kale in pot and mix well. Add oil if pot gets dry. Next add chicken broth and turn the heat up. Bring the soup to a boil then simmer for 30 minutes. Season to taste with salt and pepper.
