Local Cucumber & Tomato Salad
- 2 cups chopped cucumbers – medium to large dice
- 2 cups chopped tomatoes – medium to large dice
- 1 cup thinly-shaved red onion
- 3/4 cup chopped fresh dill
- 3 Tablespoons cider vinegar
- 6 Tablespoons Olive Oil
- Salt & Pepper to taste
A simple summer salad that’s the perfect side for grilled meats and seafood.
Toss all ingredients in a bowl, adjusting salt and pepper to taste. Serves 8-10 people.
