Butter Bean Hummus

Butter Bean Hummus - Fresh On The Menu Recipe

Serving size: ½ cup

Prep time: 30 minutes

1 quart – Cooked Butter Beans (pureed)
1 cup - Diced Tomato
¼ cup – Diced Celery
¼ cup – Red Onion (diced)
1 Tablespoon – Chopped Parsley
1 Tablespoon – EVOO
¼ cup – Grated parmesan cheese
1 ea. – Lemon
To Taste – Salt and Pepper

  1. Combine; butter beans, tomatoes, celery, red onion, parsley, and parmesan together in a bowl. Mix thoroughly.
  2. Slowly add in olive oil, parmesan and the juice of one lemon. 
  3. Season with salt and pepper to taste. 
  4. Served chilled with your favorite vegetables and crackers.
